What does freshly baked bread mean?

Freshly baked bread generally means bread baked on premises that was made relatively recently. How relative is today's topic. I did my weekly Wednesday ritual of a 6-inch turkey breast (the $2.49 special of the day) sandwich. They were out of the wheat bread, but the woman behind the counter told me to wait as they were bringing a loaf out of the oven. She had a bit of a time handling the very hot bread as she made the sandwich. I walked out with my sandwich wondering if "truly fresh bread" made much of a difference. Oh boy, did it. It was tremendously soft. I did bring it back to the office on a 60F day after a 7-minute walk, but still, it was amazing. True connoisseurs agree that bread makes a sandwich. Today, it was the difference between an OK sandwich and a great sandwich. If I could get bread that fresh every day, Subway would know me by name. So how old is the bread I normally get? Probably not that old, but not fresh like this. I worked in an Italian restaurant that did bake its own bread in the morning. When you got it first thing, it was beautiful. By dinner, good but not great. So we would take some pieces, wrap them in a paper towel and microwave them for 30 seconds. Tasted just it came out in the morning. If only Subway could do that. . .
